Bacteria, yeast, molds and spoilage microorganisms are the enemies of your fine wine product.
Unfortunately many antimicrobial products generate TCA/TCP residuals which also affect your finished product. Now you can harness the power of ClO₂ with superior antimicrobial abilities with absolutely no byproducts.
For fine wine makers who want to use one of the strongest biocides available to raise the level of sanitation in the winery without compromising the quality of the wine, we offer the Selective Micro line of products.
- Disinfects, sanitizes and cleans without producing trichloroanisoles (TCA) or precursor trichlorophenols (TCP), which affect wine quality by creating off-odors.
Unlike other sanitizing products that chlorinate and create TCA/TCP residuals, Selective Micro products reduce yeast and mold without affecting the quality of wine. Our products and protocols are optimized to inhibit and control spoilage organisms on grapes for further processing, picking bins, crushers, hoses, destemmers, sealed concrete floors, walls, and steel or wooden wine barrels. For winery use we recommend the 2L500 and 12G products.
Usage Example
There are a wide range of applications foe Selective Micro products in the wine making process. Place the Selective Micro sachets in a tank or vessel of water that you can use to introduce the ClO₂ to a waterline, process tank, wine barrel or other liquid container. The size of the vessel and the amount of Selective Micro products used will vary depending on the size and scope of the application. At a very low concentrations of only 10 to 50 ppm, Selective Micro products provide superior antimicrobial efficacy. Selective Micro products also expand in tanks to clean all head space without wetting the surfaces. Because of the selective nature of our products, they rinse away instantly with no residue.
FAQ’s
Chlorine dioxide use continues to grow due to its anti-microbial properties and neutral pH. Still there are many questions regarding its use and properties. Here are just a few of the most commonly asked questions and the answers.
What does Selective Micro make?
-
Selective Micro products are nearly pure (>99.9%) solutions of chlorine dioxide in water. Selective Micro products are generated via patented micro-reactor technology, designed to produce a specific amount of chlorine dioxide simply by adding water.
How do I use Selective Micro products?
- Introduce Selective Micro chlorine dioxide solution into water to wash fruits at the concentrations and for the contact times specified on the label and technical bulletin. Selective Micro products come in the form of a packaged sachet. Simply open the package and add the sachet directly to the desired volume of water. After generation, dilute as required.
Why use Selective Micro products over alternative treatments?
- Enhances quality—taste, appearance, texture
- Superior efficacy at low concentrations
- Neutral pH
- Compatible with and non-corrosive to processing equipment at recommended use concentrations
The products are an effective alternative to other antimicrobial and washing agents on the market today. Chlorine dioxide has a higher oxidation capacity than bleach, ozone or peroxide. In other words, chlorine dioxide has more capacity to remove organic matter. Because it is more selective to key organics, and less “aggressive” in oxidizing, at the recommended application concentrations, it is not corrosive to system components prone to oxidation.
Will Selective Micro products affect my wine’s taste?
- No. Because Selective Micro products are so pure (>99.9%), they clean and sanitize at a neutral without generating trichloroanisoles (TCA) or precursor trichlorophenols (TCP), which affect wine quality by creating off-odors.
Has chlorine dioxide been used before?
- Chlorine dioxide has been recognized as an effective biocide for decades, and is used in a range of hygiene-related applications worldwide. Municipal water systems, for example, have used chlorine dioxide to treat drinking water for over 50 years.
Why couldn’t I use chlorine dioxide before?
- Prior to the introduction of Selectrocide® in 1999, complicated, expensive mechanical generators or relatively impure “stabilized” solutions were the only ways to make chlorine dioxide. Shipping chlorine dioxide in non-frozen forms was and is prohibited. The expense of complex capital equipment, the corrosiveness of the lower-quality “stabilized” solutions, and the shipping limitations inhibited the development of many professional and consumer point-of-use applications. Now, using Selectrocide®, nearly pure (>99.9%) chlorine dioxide can be generated at the point-of use—without capital-intensive equipment.
What is the shelf life of Selective Micro products?
- In the unopened package, Selective Micro products have a shelf life of two years. Once the product is activated, use the Selective Micro solution within 15 days. Store activated solution according to instructions on label.
Will Selective Micro damage my equipment?
- No. At recommended concentrations our products are extremely compatible with materials with a neutral pH.
Is there a test for concentration of Selective Micro chlorine dioxide?
- Chlorine dioxide is easily detectable. For quick on-site verification, Selective Micro offers test strips that quickly and accurately detect concentration and the rinse-out threshold.
